Softer Cakes

Technical Hints & Tips

  1. Flour should be “Hi-Ratio” or Sponge Flour. These will increase liquid absorption, therefore assisting to produce softer cakes.
  2. Use only margarines and shortenings that have excellent aerating or creaming properties. EOI Trend, EOI Monarch, EOI Sovereign and EOI Gateau Gold have been subject to trials and controls which the stringent criteria required for a quality cake margarine and shortening.
  3. Without correct formula balance the best ingredients and operating conditions can be to no avail. EOI recipes have been subjected to extensive bakery trials in accordance to those guidelines.
  4. Use either: EOI Trend, Monarch, EOI Gateau Gold or Sovereign
Suitable for the following products:

Monarch 15kg

Premium vegetable cake margarine with a buttery, baked through flavour. Ideal as a partial or total replacement for butter. This product is virtually Trans Free and is suitable for vegetarian use.

Trend 15kg

Traditional all-purpose cake margarine with a vanilla flavour.
