    Aerate until light for approx 15 min.

  • Method:
    Add to group 1 and aerate until light about 10 min.

  • Method:
    Add gradually to group 1 and 2 over 5 min.

Solite Chocolate Ganache

Group 1

  • Ingredients:
    Dark Chocolate
  • Method:
    Melt in bain marie
Group 2
  • g/ml:
    2000
  • Ingredients:
    EOI Solite
  • Method:
    Add to group 1 & whisk by hand until combined
  • 4500

Additional Information:

Ganache can be used as a set ganache or melted in a bain marie again and used for pouring.

The amount of Solite Ganache can be adjusted to taste.
