The finest sweet pastry for all general sweet shortbreads.



Group 1
  • g/ml:

  • Ingredients
    Caster sugar
    EOI Gilt, Shortex or Pride
    Bakers flour
  • Method:
    Mix to a smooth paste, scrape down the bowl.
Group 2
  • g/ml:
    300
  • Ingredients
    Water
  • Method:
    Add and mix in completely.
Group 3
  • g/ml:
    1500
    25
  • Ingredients
    Hi ratio cake flour
    Baking powder
  • Method:
    Add all mix to a clear, smooth, dough.

Additional Information:

Baking:
180 to 190C (variable bake times)

Note:
Dough can be prepared in advance. The portion required each day should be returned to the mixer and lightly mixed before rolling out and using.

And use either:
EOI Gilt, Shortex or Pride

Gilt 12.5kg

Shortex 12.5kg

Traditional vanilla flavour margarine for all short pastry, sweet crust and quiche bases.

Pride Block 12.5kg

Premium vegetable margarine for use in all quiche base and short pastry lines. Ideal as a partial or total replacement for butter. This product is virtually Trans Free and is suitable for vegetarian and vegan use.
