EOI Solite Cream (3 recipes to choose from)

This is a traditional mock cream recipe, ideal for piping, fillings, or toppings. This quantity is suitable for a 20 litre bowl.

  • 2000g EOI SOLITE
  • 1500g Caster Sugar  

Cream Group 1 together on medium speed for 3 minutes.

  • 900g Water  (23°C – 24°C)

Add to Group 1 in small lots over 5 minutes aerating on medium speed.

This cream is capable of accepting flavours or colours. Ideal for filling or piping.

  • 2000g EOI SOLITE  
  • 2000g Fondant

Beat or whisk till light, about 10 minutes on medium speed.

  • 600g Water (23°C – 24°C)

Add gradually during a further 3-5minutes machining.

This cream recipe has been designed for spreading and decorative work. Ideal for Torten and Gateaux. Flavours and colours may be added as desired.

In very hot weather/climates we recommend you substitute EOI SOLITE with EOI SOLITE TROPICAL.

Cream together until light, about 15 minutes on medium speed.

  • 1000g Water

Add gradually over a period of 5 minutes.

This cream is designed for spreading and gives a very clean cut in Torten and other Gateaux varieties.
